
Cooking with Chef Soto
Miso soup-serves 4

Ingredients:
* 3 cups Dashi soup stock (Bonito & Kelp soup stock) * 4 Tablespoons of White Miso bean paste
* Assorted vegetables (your choice) mushrooms, green onion, tofu
Preparing Dashi soup stock:
1. Warm 3 cups of water and 2 pieces of kelp over medium heat 2. Remove kelp before water begins to boil
3. Add 1 cup dried Bonito Flakes
4. Boil for 2 minutes then strain
Preparing Miso soup:
1. Heat Dashi soup stock (but do not boil)
2. Add 4 tablespoons of White Miso bean paste 3. Stir until paste is dissolved
4. Pour into bowl and add assorted vegetables 4. Enjoy!
