    Cooking with Chef Soto

    Soba Noodles

    Posted: Tue February 10, 1998 at 1:00 p.m. ET


    Ingredients:
    *Dried Soba noodles
    *1 cup of 10 dried Shittake mushrooms
    *4 cups water
    *1/4 cup soy sauce
    *1/8 cup Mirin (sweet sake)

    Preparing Soba Noodles:
    1. Soak mushrooms in water for 4 hours at room temperature
    2. After soaking, heat until boiled.
    3. Skim white mushroom deposits off of top of broth
    4. Turn off heat and strain broth (throw away mushrooms)
    5. Mix in soy sauce and mirin with broth and stir until mixed
    6. Boil noodles in water until soft (approx. 15-20 minutes)
    7. Strain noodles
    8. Put noodles into ice water and let stand until noodles are cold
    9. Strain again
    10. Serve noodles and broth separately
